Gluten Free – Dairy Free – Grain Free
I work. Alot. When I get home I feel like all of my time is spent in the kitchen cooking since my little girl can’t have dairy or gluten she cannot eat food at most restaurants and cannot eat school lunches either. (This does not hurt my feelings honestly as school lunches are not at all classified as healthy in my book).
I usually make most of my recipes from scratch, however, I have found a really great almond flour and cassava flour based muffin brand that I happen to love! Simple Mills. These muffins only contain 7g of sugar in one single muffin as opposed to another leading brand having double that at 15g of sugar in one of their muffins on top of not being able to pronounce some of the ingredients. Just saying.
Simple Mills products all have ingredients that you will recognize. This is what stuck out to me when I found the product. It’s all real-food ingredients without anything artificial. Some of the ingredients in the products are:
- Almond Flour
- Apple Cider Vinegar
- Chia Seeds
- Coconut Flour
- Coconut Oil
- Coconut Sugar
- Flax Seeds
- Hemp Seeds

These are super easy to make! You just add 1 cup of water, 2 eggs and 2 Tablespoons of oil (or grassfed butter if my little one isn’t around). Try them out! I often find myself lacking time due to working, traveling, going to tutoring or sports activities, etc. And these are healthy, always great in a pinch and my entire family loves them. Win Win!
